Ingredients
1 1/2 cups oil
2 cups sugar
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs
1 cup chopped nuts
1 can apple pie filling
Prepare
Mix together well all ingredients, except nuts and pie filling.
Add nuts and pie filling into mixture and thoroughly stir. Pour batter into 2 (or 3) greased and floured loaf pans.
Hints: Good served warm, topped with vanilla ice cream.
Freezes well for up to 3 months.
Add 1/2 cup minced candied cherries.
Add 1 cup chopped dates (toss in flour prior to adding to batter).
Serve as a snack with a wedge of cheese and fresh apple slices.
Wonderful served with hot vanilla/raisin sauce (recipe below)!
This freezes well, so I usually make a double batch and freeze a couple of loaves in zip lock baggies. Saves on mess and power bill.
This is a great one-bowl, quick, easy clean-up dessert bread. ENJOY!
Vanilla Raisin Sauce
Mix 1/2 cup white sugar, 1/2 cup light brown sugar, and stir in a heaping tablespoon of cornstarch. Add 1-1/2 cups water, and mix well. Put on low heat until all sugar is thoroughly disolved. Then turn up to medium heat and add about 2/3 to 1 cup raisins (according to how heavy with raisins you want it). When it starts a simmer, add 1 tablespoon butter and 1 teaspoon vanilla, and cook on a low simmer for about 5 to 8 minutes.
Note: I used to make this to go over apple dumplings, fresh out of the oven. If you want to get a little "fancier", you can eliminate 1/2 cup of the water, and add 1/2 cup rum and a splash of lemon juice.
(My mother used flour instead of cornstarch to make this sauce, but I much prefer cornstarch.)
