Ingredients
4 frozen fish fillets (boston bluefish, cod)
2 tbsp flour
1 tbsp chicken boullion powder
2/3 cups water
1 rind and juice of orange
1 tbsp lemon juice
Prepare
Spray a baking dish with pam and preheat oven to 400 degrees.
In a small bowl combine flour and chicken boullion. Stir in water, orange juice, rind and lemon juice. Pour the sauce over the fish. Cover tightly with foil. (OR, you can wrap all this in a parchment paper or foil pouch and toss in the oven or on the grill.)
Serve with:
Parsley Rice
Put one cup rice into a medium pot, add two cups water, 1/2 tsp salt and 1 tbsp dried parsley. Stir together and simmer for 20 minutes covered. Fluff with a fork before serving.
This recipe is very low cal and low fat. I've made this hundreds of times and it's delicious and easy to make.
