Gourmet Cinnamon Rolls: Not for dieters!!! - Breads, Muffins & Rolls

Ingredients  
2 package dry yeast
1/4 cup warm water
1/2 cup shortening
1/3 cup sugar
1 teaspoon salt
1 cup milk
1 beaten egg
1 tsp pure vanilla
1 tsp lemon or orange zest
4 - 5 cups sifted flour
melted butter
brown sugar
cinnamon 
Prepare   
Add the warm water to the yeast with 1tsp of sugar and soak 10 minutes, allow yeast to bubble some.

Scald milk; pour over the shortening. Add sugar, lemon zest, vanilla, and salt and cool to tepid, then add the egg and dissolved yeast and beaten egg. Add 4 cups flour adding one at a time beating after each addition. Dough should be soft, not dry or too firm.

Knead on floured board until elastic and smooth. Avoid too much flour, add only about 1 more cup. Turn dough into buttered bowl. Let rise until doubled, about 1 to 2 hours.

Punch the dough down and divide into two balls. Roll dough out into a rectangle. cover with melted butter. Layer with a decently thick layer of brown sugar. Sprinkle with cinnamon as desired. Roll up from the long end of the rectangle and tuck the ends in.

Slice off about 1-1/2 inch slices with a sharp knife. Place in baking pans or muffin tins. If on sheets or in pans, space about an inch apart. Let rolls rise another hour.

Bake in a 350 degree F oven about 15 - 20 minutes. Make sure rolls don't overbake. You can cover with foil loosely if they begin to brown too quickly.

Remove from the pans onto a cooling rack sitting on waxed paper and frost.

Icing/glaze

2 cups powdered sugar
3 tablespoons melted butter
1 teaspoon vanilla
1/2 tsp lemon zest
Milk

Blend vanilla, lemon zest, melted butter. Add sugar, blending well. When it starts to get thick, add milk a little at a time, and the remaining sugar until the consistency is like a stiff cake frosting.

Spread over the hot rolls and allow to melt and dribble down the sides. You can dust with a bit more cinnamon before the icing sets.

Optional: You can allow the rolls to cool completely and warm in the microwave with a bit of this icing on them. The icing will melt over and into the rolls as they heat up in the microwave.
